Re: Dinner Tonight!!
Great read once again Jordan. Food looked great...not sure about the risotto and chicken leg, but I'm sure it tasted gorgeous.

Re: Dinner Tonight!!
Thanks guys.
I start the new job next week which unfortunately (or fortunately) requires me to be on the road a lot.
I'll be nipping on more in the evenings when I've got a bit more free time.
I miss this place! (And you guys)

Re: Dinner Tonight!!
Ok....no Jordan lately, so I'm attempting something I've never made before....can't believe I've never made one - but a Beef Strogonoff.
Problem is, we don't have any Brandy in the house. Any suggestions of an alternative to Brandy?
I think Delia uses Cider...but I'm making Jamie's version.
All ingredients set, sliced and ready to go for when the wife gets home.

A new snack...or breakfast
Saw this thread hadn't had a new post for some time, so decided to post something I tried last week for my family as a snack, as we had both lads in the house for a change.
OK....very very simple, but gorgeous.
You'll need the following:
A muffin tray (a tray for small cakes)
Eggs (preferably free range and organic) - number dependent on how many you want to make.
Wafer thin ham (some nice thinly sliced off-the-bone would be good, but a packet one will be fine - as long as it's not too thick)
A small amount of grated Cheddar
Salt
Pepper
Chopped parsley - but not imperative
OK - to make it.
Prior to any of the ingredients, use a nice Rapeseed Oil or Olive Oil to line each cup to avoid any of them sticking. Spread it around the muffin cup and across the top.
Take a piece of ham - one slice that will be bigger than the muffin tray cup and place this into the muffin tray cup, so it makes a cup to receive the other ingredients...but is enough to stick out above the rim.
Add a small amount of grated cheese into the ham cup you've made.
Then add a cracked free range egg on top.
Salt n Pepper to taste and then a slight sprinkle of Parsley (if you have it)
Bake in a pre-heated oven at 200 degrees for 12 minutes.
This is what you should get. Add salt n pepper to taste.
Truly simple, truly gorgeous.
