URGENT HELP NEEDED

Hi.
Is there anybody who is an IT Web expert or knows how to add in meta tags to my new website using HTML 5?
I'm no web expert, but have been researching these things and understand the coding as in:
<!DOCTYPE html>
<html>
<body>
</body>
</html>
From there on in - where exactly do I type each of these into my web pages?
I have Header 1/2/3/ etc on each page - but where do I type each one?
Any help would be greatly appreciated!
Cheers....here's hoping someone has this kind of knowledge.
New company - new challenge....any SEO advice would be good as well.
